Protein Pancakes
Our protein pancakes are rich in high-quality protein and contain very few carbohydrates. This recipe is easy, quick to prepare and, perhaps most importantly, absolutely delicious.
Tasty, filling and healthy - now that’s the whole package! These pancakes can be a great breakfast, snack or even savoury meal.
One of the great things about this recipe is that you can choose many of the ingredients yourself to decide whether it's a sugary calorie bomb or a protein-packed super snack.
Our recipe is simple, quick to mix and gives you energy you need for the day. And there are no limits to your creativity when it comes to toppings - every pancake can be unique!
Why is this recipe good for you?
Oatmeal instead of plain wheat flour is always a good idea. This is because oatmeal lowers blood sugar and cholesterol levels, provides fibre, vitamins K, B1 and B6 and important minerals such as copper, zinc, phosphorus, magnesium, calcium and potassium.
The combination of XbyX Daily Energy, eggs, soya milk and co. gives you 32g of protein per portion.
Ingredients
2 | Eggs |
25 g | Rolled oats |
2 tbsp | XbyX Daily Energy or Daily Energy Plain |
1⁄2 tsp | Baking powder |
80 ml | Unsweetened soya milk |
1 tbsp | Coconut or rapeseed oil (for frying) |
1 tsp | Cinnamon |
100 g | Fruity topping to serve |
Preparation
- Place the eggs, rolled oats, XbyX Energy, baking powder and soya milk in a blender or food processor, chop and mix well.
- Heat the coconut or rapeseed oil in a pan and fry the pancakes until they are nice and crispy.
- Sprinkle with cinnamon and serve with a 100g of soft fruit of your choice.
TIP:
If you want to make this recipe savoury, we recommend cheese, quark or salmon as savoury toppings.
